sweet treat // crunchy peanut butter cups

just in time for valentine's day!

one of my husband's love languages is peanut butter cups. when i pinned this recipe yesterday, i knew i needed to make them asap! i made a few adjustments, also making them gluten free, so i can enjoy a few as well. obviously. so, here's an easy homemade treat for your loved ones, tomorrow or any day. crunchy, peanut buttery, chocolate-y, salty goodness.

1/4 cup butter
3/4 cup smooth peanut butter
3/4 cup crushed cookies (i used these, yum!)
1/8 cup sugar
1 cup mini chocolate chips
1/4 cup coconut milk
sea salt

line a  muffin tin with papers, i used mini liners/tins.
in a microwave safe bowl, melt the butter & peanut butter for 45 seconds. stir until smooth, then add crushed cookies and sugar and mix to combine. evenly fill your mini muffin cups. refrigerate cups for 15 minutes to set your peanut butter layer.
after the peanut butter has chilled, mix chocolate and coconut milk in a microwave safe bowl and heat for 25 second intervals, until just melted. stir until smooth. evenly add chocolate over the top of the peanut butter layer. sprinkle generously with sea salt and chill in the freezer until firm, at least 30 minutes. enjoy! store your peanut butter cups covered in the fridge.
