hello. {miscellany monday, yo}

hey there. you look mighty beautiful today.

sometimes patrick and i play wii. it's hilarious.
i am so lazy that i sit down in between turns.
also, wii bowling is the only kind of bowling you'll catch me doing voluntarily.
mostly it's fun because patrick and i are laughing together. and i have a hot pink controller.

i added a few new styles to the shop, check them out!
it occurred to me that not everyone wants or needs crazy color combinations.
so i'll be trying to add more into the solid color section for you plain folk. ha.

we took elijah to the doctor to check on his allergies...after awhile you begin to wonder
if it's something more, you know? but yep, just awful allergies. i've got 'em too.
anyway, at the doctor's office, elijah picked up this book to look at.
it immediately transported me to my preschool. this book was in my classroom.
i may have had it at home, but i remember it from my class.
this little flashback was especially weird, because i was sitting in a tiny little chair at a tiny little table
with elijah. like preschool, a million years ago. it was strange and awesome at the same time.

and now. a recipe.
i made an apple crisp the other night.
i didn't have the kind of apples i prefer, but it was still delicious.
maybe you'd like a crisp, too?

apple crisp
7-8 apples {i prefer fuji or granny smith, but whatever's on hand is great!}
1/3 cup sugar
1 teaspoon cinnamon

slice your apples, remove skins if you want. i cut my apples into chunks, and leave the skins on :)
mix apples, sugar and cinnamon in a large microwave safe bowl and microwave for 3 minutes.
stir mixture and microwave another 3 minutes.

in a separate bowl, combine
3/4 cups quick oats
1/2 cup flour
1/3 cup packed brown sugar
1 stick butter

mix together with a pastry blender. or if you're like me and can't find yours, use a fork.
when it's all nice and crumble-y, add in a 1/4 cup chopped walnuts or pecans. so good. mix well.

pour your apple mixture into an 8x8 baking dish and top with crumb mixture. bake at 400 for 25 minutes.

serve warm...with vanilla bean ice cream :)
{obviously you can adjust sugar measurements as you wish, i do. sometimes.}

  8. Mmmm, your apple crisp sounds yummy. Here in NZ, we would call it apple crumble - and it's my favourite dessert ever! It's amazing when you put raspberries with the apple, and coconut in the crumble topping. Might go make me one for lunch...
