random {insta} friday

for one thing. i can't believe that i keep getting surprised by friday.
time is moving a little too quickly for me. do you feel that way?

another thing, i love being surprised with brownies.
since no one ever really does that, i make them for myself.

sunday was the day for such a thing.

this is my favorite recipe. even though i know most recipes by heart,
i feel the need to crack open the book, or drag out the card and stare at it for awhile.
am i old? ocd? do i even care?

these fudgey brownies are legit:

1/2 stick butter
1 1/2 cups flour
2/3 cup cocoa powder
1/2 tsp baking powder
1/4 tsp salt
1/4 cup oil
1 1/2 cups sugar
3 eggs, lightly beaten
1 1/2 tsp vanilla
1 cup chopped walnuts, plus extra 1/2 cup for topping

1.preheat oven to 350 degrees. lightly grease 9 in square pan(the bottom, not the sides).
2. melt butter in saucepan or microwave, place in a large bowl to cool.
in another bowl, sift together flour, cocoa, powder and salt. set aside.
3. to the cooled butter, add oil and sugar and stir briefly. then add eggs and vanilla just until combined.
the mixture will be thick and grainy, that's ok! fold in the flour mixture and 1 cup nuts.
4. the mixture will be thick, so pat it into the pan, use your fingers or a spoon. sprinkle with more walnuts.
5. bake for 25 minutes. the brownies will still give a little when touched, don't over bake!
let the brownies cool, then cut and serve!

and get ready to make fun of me, the recipe is from this super cool book:

jenny jones is the real deal. i like her. and i love most recipes in this book. and i am not ashamed.

hello, summer 2009. my, were you crazy!
elijah loves grabbing this photo strip and hugging it. melt my heart.
and he's even been saying "mama" and "papa" as he totes it around the house :)

we hang out on the stoop. it's what the cool kids do. elijah takes it all very seriously.

if i'm way lucky, maybe once a week, my little stoop dweller naps.
and i admire his sweet, dirty feets. that's the sign of a kid's fun summer, i think.

i've been up to the same old grind. of the coffee variety.
in big boss mugs, like this one from fancy susan.
this is what the mug swap gave me last year.
i have my partner assignment for this year and i can hardly wait to shop!

some days are hard. and two in a row. help.
praise jesus for turning my attitude around,
and for using sweet friends to send me a happy message. oh happy day!

  11. If we were neighbors I would bring you brownies and let our wild boys wear each other out. Since we're not, I'll say thank you for the brownie recipe. I have a great recipe but they are chock-full of bad things. Like two sticks of melted butter and 2 cups of sugar! Yowza! But man they're good. I'll be trying these lickety-split! Happy Friday! I hope there's some relaxing in your weekend!
